[tor-project] service documentation refactored in wiki

Hi,

As part of an effort (ticket #31261) to consolidate and clarify our
service documentation, I have merged the following two pages in the
latter:

https://trac.torproject.org/projects/tor/wiki/org/operations/Infrastructure
https://trac.torproject.org/projects/tor/wiki/org/operations/services

All pages previously under Infrastructure/ are now under
services/. Please do not create pages under "Infrastructure" anymore and
instead create them in "services".

Also, help is very welcome in updating and maintaining documentation in
those pages. If you see any inaccuracies or omissions, please *do* add
and change things in the wiki. In particular, I suspect that the
maintainers columns is seriously out of date for most services.

I would also be grateful is someone could tell me what those pages are
for:

https://trac.torproject.org/projects/tor/wiki/org/operations/Infrastructure/Hosts
https://trac.torproject.org/projects/tor/wiki/org/operations/ProductsandAssignments

.. and if they can be destroyed or merged into the services page.
